Paul Casey (founder of Cooksville Sauces) describes the inspiration for creating Polski Style :
"My uncle Jon, who was instrumental in our Garlic and Dill recipe, gave me a mirror to which he had sandblasted the Polish Eagle into, a tribute to his home country as well as my heritage. It hangs in our dining room. Another Polish tradition at the Easter meal is Cwikla, horseradish and beets. In honor of this heritage we created this sauce combining locally grown red Datil chilies with beets, horseradish and caraway. Great in borsch (or good old chicken noodle soup), not to mention pirogues, cabbage rolls and kapusta.
Ingredients: Hot Red Peppers, beets, horseradish, pickling spices, caraway, vinegar, salt, water.
